Fresh cows milk has a pH of between 6.7 and 6.5. Values higher than 6.7 denote mastitic milk and values below pH 6.5 denote the presence of colostrum or bacterial deterioration. Because milk is a buffer solution, considerable acid development may occur before the pH changes.

Production worldwide. In 2009, the largest producer of milk and milk products was the European Union followed by India, the United States, China, Germany, Brazil, and Russia. All European Union members together produced about 138 million tonnes of milk in 2011.
